Yuzu koshō (柚子胡椒)  is made by mixing grated yuzu with grated raw green chili, seasoning the mixture with salt then fermenting the mixture. 

Yuzu koshō (柚子胡椒) is a Japanese seasoning, originated in Kyushu, the third largest and most southern of the four main islands of Japan. It is a paste made from chili peppers, yuzu peel, and salt which is then allowed to be fermented.

Yuzu koshō (柚子胡椒)  is usually used as a condiment for hot pot dishes, miso soup, sashimi, and sauce/seasonings/dressings. My recipes using Yuzu Kosho are listed below.

Directions (About 40 Servings):
1 box Java curry, 1.2 kg beef, pork or chicken, 8 (1.6 kg) onions (medium size), 8 (1.2 kg) potatoes (medium size), 4 (800g) carrots (medium size), 150g butter or vegetable oil, about 5 litres water
Cooking Instructions:
1. Cut meat, carrots, onions and potatoes into bite size pieces. Saute with butter (or vegetable oil) until light brown
2. Add water and bring to a full boil
3. Cook until the meat and vegetables are tender
4. Turn off the heat, break curry sauce mix into pieces, and add to mixture
5. Cook over low heat for about 30 minutes
6. Serve over cooked rice or noodles

This mildly spicy Yakitori no Tare (Barbecue Sauce for Broiled Chicken) with coarse sugar added produces an excellent glaze. The spicy flavor is also well-suited to teriyaki (meat or fish marinated and broiled in a sweetened soy sauce) dishes.

Recipe Information:

CHICKEN: Marinate chicken pieces 30 to 60 minutes. Cook as desired, basting with Yakitori Sauce while cooking.

BEEF: Marinate tender cuts 30 minutes. Less tender cuts, such as chuck or round, 1 to 3 hours.

GROUND BEEF: Add 2 tbsp. Yakitori Sauce to 1 pound meat. Shape into patties; grill or broil to desired degree of doneness.

FISH: Marinate steaks & fillets 30 minutes before cooking.
